How cool is this! From my little experience over at JessicaSprague.com i highly recommend her Up&Running class and i am sure this free (did you see that, free - got to love a freebie) class wont dissappoint.
Boy these last 3 months of the year are getting rather busy
I had some friends over this morning and decided to get up early and make some pumpkin muffins. Been making these now for a bit and they are a huge hit with everyone who eats them. The recipe is from Becky Higgins Blog
Pumpkin Chocolate Chip Muffins
1 cup flour
1 cup sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground cinnamon (but i put in 1 tsp cause it is a fav spice of mine)
2 eggs, beaten
1 cup ground pumpkin (canned)
1/2 cup cooking oil (i use sunflower oil)
1/3 cup chocolate chips
Mix together. Fill muffin cups and bake for 20-25 mins at 350 F (round 170-180 C)
I am going to next time try and make my own ground pumpkin seeing as pumpkins are in season, found this recipe for it.
